Today kicks off my Sunday Supper series where I share recipes I love.

I’m going to *try* to post every Sunday.

We’ll see how that goes.

Since many of us are Shelter-in-Place or avoiding grocery stores as much as possible, I thought I’d kick off the series with recipes you can make with simple easy ingredients that might already be in your pantry.

Let’s kick it off with one of my favorite easy recipes that miraculously, all of my family members like.

Now this is spicy hot, so you can experiment with the hot ingredients to get it to your heat level.

4 oz wide egg noodles or lo mein noodles (I use however many ounces come in one bag and then triple the rest of the ingredients)
2 Tablespoons butter
1/4 teaspoon crushed red pepper flakes
1 large egg
1 Tablespoon brown sugar
1 Tablespoon soy sauce
1 Tablespoon Sriracha rooster sauce
1 handful fresh cilantro leaves chopped
1 sliced scallion

  1. Boil water and cook noodles according to directions.
  2. While doing #1, prepare the sauce by combining sugar, soy sauce, rooster sauce.
  3. Melt the butter in a skillet. Add the red pepper flakes as it melts. Once melted add egg. Stir and as soon as egg cooked, turn off heat.
  4. Mix cooked and drained noodles with egg and sauce and mix.
  5. Serve with generous topping of cilantro and scallions.
